Chickpea and Cashew Biryani & Indian-Style Potatoes and Spinach-Vegan Dad Blog
Can I just publicly announce that I LOVE the Vegan Dad blog? Seriously, everything recipe I make from there comes out a-m-a-z-i-n-g...just sayin'. My family and I love Indian, and this meal was no let down. The Biryani was so comforting, and the potatoes were a nice compliment. I really can't say any more..other than go try this asap, it is well worth it! Hope everyone is having a great weekend!

Sunday Brunch-Tofu Scramble Pastry Cups, Fried Potatoes, and Apple Strudel
We decided to try something different for breakfast this morning. For most people, brunch typically starts later in the day, but since the girls had play rehearsal at 1pm, we did ours early. Either way, it's an excuse to make something pretty and yummy! So I am a big believer in Pepperidge Farm puff pastry, and it's awesome that it's vegan. I always buy the sheets, and that's what I used for the apple strudel, but for the scramble, I tried the shells. These were a snap to make, and to me and the family, they were also hella impressive. My gf made her signature fried potatoes, and we were all set. I love weekends! So for the scramble, I used the one on the Vegan Dad blog (surprise surprise), it was very simple. It calls for minimal spices, a little nutritional yeast, and a little soy creamer; so it's very much like basic scrambled eggs. Have a great week everyone! :-)

Peanut Tempeh with Noodles-courtesy of Vegan Dad
So tonight was 'Special Dinner' night, and I made this really cool tempeh recipe courtesy of Vegan Dad. My gf really looks forward to these nights. It's the one night I can use up all the cool ingredients I beg her to let me buy at Whole Foods.
Tonight's ingredient superstar was Indian Red Curry Paste. I've not had the opportunity to try it yet, and we bought it like two months ago lol. Anyhoo, this came out awesome. One change I made was throwing in some spinach at the end I wanted to use up. It was a nice compliment. Oh, and I did not use the recommended 1/4 teaspoon of the curry paste...I used 2 tablespoons...:-), we like it hot! Oh and check out the awesome plates I found at Big Lots last weekend, I love them! Also, on the side there is some baked Acorn squash we got at Brooksby's Farm when we went apple picking a couple weeks ago.
